Show up with love and blueberry cobbler
It’s summer. The trees know it, heavy with fruit and sweetness. The sky knows it, clear with radiant blue and sunbeams. The grill knows it, fired-up nightly for al fresco dinners. And this recipe for blueberry cobbler knows it. Relying on a summertime favorite berry, the cobbler celebrates warm evenings and seasonal bounty.
It’s the kind of recipe that comes together so simply that I make it a lot over summer. In fact, I’ve taken to calling it my “show up cobbler.” Its ease of preparation and universal appeal make it the perfect dish to show up with for family, friends and neighbors who might need a bit of comfort in their lives.
I’ve been known to leave the cobbler on doorsteps just as often as preparing it for a potluck. When someone in my life needs a reminder that they are not alone or that they are stronger than they imagine, this cobbler delivers a reassuring message in every sweet bite. I encourage you to consider who in your life could benefit from a blueberry cobbler drop off. Bonus points if you’re able to include a pint of vanilla ice cream in your delivery.
While cobblers are often made with heavy cake-style drop biscuits, this lighter version lets the fruit be the star of the show.
The lemon zest is a whole lot like love. Even a small amount changes everything. The zest is essential to the flavor despite being the least ingredient in terms of quantity. Lemon balances the blueberry and sugar, creating harmony, while adding brightness and ensuring the simple dessert isn’t one-dimensional – like love.
Christine’s Show Up Blueberry Cobbler Ingredients
- 3 1/2 cups washed, organic blueberries
- Zest and juice of one lemon
- 3 tablespoons sugar
Preheat oven to 375°. Mix ingredients together in a large bowl then add to a 9x13”, buttered baking dish. Set aside while you prepare cobbler topping.
Topping
- 1/2 cup soft butter
- 1/2 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- 2/3 cup flour
- 1/4 teaspoon baking powder
- Pinch of salt
Cream butter and sugar together until fluffy. Add egg and vanilla extract and mix well. Add salt, flour, baking powder and mix just until incorporated.
Spray a tablespoon or small ice cream scoop with non-stick spray. Evenly place batter in tablespoons atop blueberries. Try to cover most of the berries.
Bake for 35-40 minutes.
Remove from oven, cool and serve at room temperature or slightly warm with ice cream or whipped cream.
