The order of things: making guacamole

Just in time for Cinco de Mayo, I'm sharing my guacamole recipe. 

There are many, many variations on the same theme when it comes to guac. Mine is basic on ingredients and specific on order. Make it once my way, and you'll never go back.

You'll need fresh produce and a mortar and pestle for this recipe.

ONE: assemble the ingredients: 1 garlic clove, juice from 1/2 lime, 1 jalapeno pepper, 1 tablespoon cilantro, 2 avocados, Kosher salt (to taste)

in order of appearance (not pictured: salt)

TWO: peel the garlic and add it to the bowl of a mortar, squeeze lime on top, add salt to taste and mash into liquid paste with pestle (doing this first allows the lime and garlic to really get to know one another)
mixture will be liquidy
THREE: wash, dry and cut jalapeno. then, remove seeds and veins and finely dice

the seeds and veins hold the heat
FOUR: wash avocado and cilantro well (wash the entire bunch of cilantro and store extra, wrapped loosely with paper towel, in the refrigerator)
I believe in washing all fruits and vegetables well
FIVE: halve, pit and dice avocado and chop cilantro
almost ready for the magic to happen
SIX: add diced pepper to mortar bowl and mash into garlic/lime mix with pestle


SEVEN: add avocado and cilantro to mortar and then mix through with slotted serving spoon mashing slightly
taste and add additional salt if desired 
EIGHT: enjoy!
